    Hello all, I have an italian ice gelato concession business, im looking to upgrade and add a portable fire brick oven. Mostly because where I live they dont exist. I want to call it fire and ice and wrap the truck like a fire engine colored in the italian flag. I use the italian ice to go to fire debt carnivals mostly and I have also been a vol for several years. I use the italian ice as a hydration station for when the local areas are battling fires in the heat as a way of giving back and getting the name out. I would like to own an italian deli someday and figure this is the next step to that. My friends think I need to add a smoker for bbq and the meat will also be a topping choice for the pizza. Is it too much? We also do a gelato, but i have limited that to one flavor like a strawberry or peach festival and other times is a pb&j.
